Wüsthof

chef's knife

History

  • Wüsthof has been manufacturing high quality knives since 1814

  • There are 2 state of the art production facilities in Solingen, Germany

  • They have more than 350 forged knives as well as cutting boards, knife blocks, scissors and kitchen tools

  • Their products bear the distinctive trident symbol

  • They focus on making knives for both professional chefs and the home cook
  •

    Style of knives

  • Wusthof Knives produce three different kinds of blades: straight edge, serrated edge or hollow edge.

  • The straight edge gives a smooth cut

  • The serrated edge is for crusty bread or traditional roast

  • The hollow edge creates a small air pocket between the knife and food being sliced which reduces the food sticking to the knife.

  • Wusthof focuses on the forged knife, which is a knife that is precision forged from one solid piece of steel which is tempered to the 58 Rockwell (which is a measurement of hardness). These tend to be heavier than the japanese style knives and the idea is to allow the weight of the knife assist in the cutting process
